Almond Flour Pancakes
In an effort to find out which foods affect me negatively and which ones can be good for me, I’ve begun looking for new recipes for every day foods that sound good and are also healthy. Not too long ago, I decided to skip standard white flour and make almond flour pancakes instead. At first, the batter didn’t look very appetizing but I decided to go ahead with it anyway.

How did they taste? Delicious! I added fresh berries and real maple syrup and it was one of the nicest pancakes I’ve had in a long time! Try it yourself and see!
Banana Coconut Cake Recipe
As usual, we bought too many bananas and some of them were getting a little too ripe to eat on their own, so I decided to make a banana cake. Since I was feeling a bit tired of standard banana cake, I decided to throw in a few more ingredients to make it a little different. I checked the kitchen to see what I had on hand and managed to find mini dark chocolate chips and shredded coconut. I thought to myself, why not?
I was happy to find it tasted great! The flavours and textures mixed well, not to mention it seemed to turn out lighter than standard cakes. I liked it so much that I’m sharing the recipe with you 😀 Enjoy!
Banana Coconut Cake Recipe
Bake at 350F for approximately 1 hour
Ingredients:
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
½-¾ cup cane sugar
¼ cup coconut sugar
2 eggs
½ cup vegetable oil or shortening
1 teaspoon vanilla
2 tablespoons milk (you can substitute almond milk as well)
3-4 tablespoons shredded coconuts
3-4 ripe bananas
Simplified Procedure:
1 – Mix wet ingredients together in one bowl (mash bananas into the mix).
2 – Add sugar to wet ingredients and mix until dissolved.
3 – Sift and mix dry ingredients in a second bowl.
4 – Combine wet ingredients with dry ingredients.
5 – Place batter into a cake pan and bake for 1 – 1½ hours. Pierce the cake with a skewer to make sure it comes out clean. When it does, the cake is done!
Recipe: Cooked Cinnamon Apples
As I mentioned in my post yesterday, here is the perfect combination for cinnamon muffins…..cooked cinnamon apples!
Ingredients:
4 medium cooking apples (peeled and cubed)
1 teaspoon brown sugar
1-2 teaspoons cinnamon powder
Optional: dash of nutmeg
Procedure:
- Cook apples over medium heat for 1 minute then reduce heat to low.
- Add sugar and cinnamon.
- Cook for approximately 5 minutes over low heat stirring often.
- Serve hot with cakes, muffins, ice cream, yogurt or even plain oatmeal.

Recipe: Cinnamon Muffins
Ingredients:
2 cups flour
3 teaspoons baking powder
½ teaspoon salt
¼ cup shortening
¾ cane sugar
2 eggs
1 teaspoon vanilla
1 cup milk
1 tablespoon butter
2-3 tablespoons cinnamon powder
Temperature: 375°F
Time: 15-20 minutes
Procedure:
- Preheat oven to 375°F.
- Mix all of the dry ingredients (minus the sugar) in one bowl.
- Add shortening and butter to dry ingredients and mix thoroughly with hands until it looks semi-coarse.
- Whisk the milk, eggs and sugar in another bowl.
- Add wet ingredients to dry ingredients and mix until evenly moist.
- Pour batter into a medium cake pan or a small cake pan and 6 muffin cups.
- Bake for approximately 15 minutes and remove when skewer comes out clean.
- Serve with cooked cinnamon apples and enjoy!

Banana Pistachio Cake
As promised, here is the banana pistachio cake recipe. It’s lovely, moist and subtle in flavour *^_^*
Ingredients:
3 medium ripe bananas
1 egg
1½ cups flour
½-¾ cup sugar (depending on your preferred sweetness level)
1 cup roughly chopped pistachios (save a sprinkle for the end)
½ teaspoon salt
1 teaspoon baking soda
½ teaspoon cinnamon
½-¾ cup butter or vegetable shortening
Procedure:
Preheat oven to 325ºF.
In a small bowl, mix together the egg, shortening and sugar.
In a large bowl, mix all of the dry ingredients minus the pistachios.
Combine the wet ingredients into the dry mixture.
Add chopped pistachios and mix until evenly distributed.
In a greased pan, pour the batter and even it out with a spatula.
Sprinkle remaining chopped pistachio.
Bake for approximately 45 minutes or until the skewer comes out clean.

Snow Day!
Lots of snow has surrounded our home…and much of Canada and the North-Eastern US states. It looks pretty everywhere we go although we do empathize those who are struggling with wicked weather in their areas. For others in the city, many have declared today a snow day and have taken the day off work. This is conveniently on a Friday before a long weekend, so many people get to enjoy four days off unexpectedly this month.
Luckily, I already had the day off, so I took some time to cook a decent meal and bake something delicious. Yum!
